Origin
This wine is obtained from Carmennre grapes grown in San Pedro´s vineyards located in the Maule Valley (Pencahue, VII region). This area is known for its hot climate and a hilly rocky terrain, what produces ideal conditions for the development and maturation of Carmenre.
Harvest
Grapes are hand-harvested in 20-kg boxes early in the morning to avoid high temperatures. Grapes are harvested with 24-25º brix. The vineyard yield is 6-8 tons per hectare.
Vinification
When the grapes reach the cellar, they are kept cold for a pre-fermentative maceration for 2 to 3 days. This pre-fermentative maceration ensures a gentle extraction of colour, taste and aromas from the skin. Then the alcoholic fermentation takes place for 8 to 10 days reaching temperatures lower than 27°C. Pump overs takes place 3 times/day. Once the wine is finished, a post-fermentative maceration is undertaken, which lasts for 1-2 weeks. The wine is then transferred to French oak barrels, where it remains for 12 months, 30% of these barrels are new. The wine is clarified with natural egg whites and after a very thick filtration is bottled.
Color
very dark, violet with black notes.
Aroma
intense spices accompanied by soft green pepper, characteristic of this variety. There are toasted, vanilla, and smoke aromas from barrel aging, a very elegant aroma, a divergence from the traditional varieties.
Palate
this is a high-bodied wine, very gentle and rich, combining many flavors. It is highly complex and leaves a velvety, sweet sensation, lots of tannins from the attack to the end, but very sweet. The oak combines well with the variety's spices; it is a long wine, leaving a sensation of maturity.
