Origin
this wine is made of grapes steming from Viña San Pedro’s best vineyards in the San Antonio Valley, in the sub-area called Leyda (Santo Domingo). The vineyards are planted only 4km away from the ocean, which allows its grapes to ripen slowly, giving birth to an intense and mineral wine, with very elegant citric notes. The vines are trellised to a vertical shoot position and drip irrigated.
Climate
the spring was quite cold, which delayed the blooming about four weeks. Then, the weather was warmer during the summer, what was in part offset by the cold breezes steming from the Pacific Ocean.
Harvest
the grapes were hand-picked, during the second week of April. Vineyard’s yield was between 6 to 7 tons/ha.
Vinification
the grapes were destemmed and macerated in the press during 8 hours and at 8°C. The alcoholic fermentation took place with selected yeasts and controlled temperatures between 10°C and 11° C, under completely reductive conditions.
Color
almost transparent pale yellow, young, with green shades.
Aroma
intense and delicate nose. This Sauvignon Blanc stands out for its freshness and complexity, mainly marked by citric fruits, such as grapefruit and lime, tropical fruits, and mineral notes.
Palate
freshness on the palate, fresh fruits, well-balanced, mineral, good acidity and volume, long finish.
Food Pairing
Ideal to pair with oysters, spider crab and all kinds of shellfish.
Serving Temperature
Serve cold, best at 10°C to 12°C (50°F to 54°F).
