Origin
This wine is obtained from the best Syrah grapes grown in San Pedro’s vineyards located in Cachapoal Valley. This is a Single Vineyard planted in an area of piedmont with clay soils with stones in the first 50 centimeters. The vineyard is a vertical trellis system with controlled drip irrigation.
Climate
was an atypical year. Temperatures were lower than normal, and the red varieties were generally harvested at least 10 days later than in a normal year. The average alcohol levels were 1° lower than normal, and the acidity higher, which aided in color and freshness.
Harvest
Grapes were hand-picked on April 25th and 26th. The vineyard yield was 8 tons per hectare approximately.
Vinification
Cold skin contact for 5 days. Alcoholic fermentation with selected yeasts and controlled temperature between 26° C to 28°C. 6 shorts pump over per day in order to keep wet skins to avoid a very slow and gentle extraction. 28 days maceration. 12 months aging in French (95%) and American (5%) oak barrels, from which 50% are new.
Color
Great intensity of color with a young and vibrant purple hue.
Aroma
Intense fruity and spicy nose, plenty of blackberries plums, with ripe and sweets notes and hints of vanilla, chocolate and blond tobacco.
Palate
Great structure with a lot of fruits and balance. It is also elegant with marked but soft tannins which provide a great volume with a slightly smoky and at the same time fruity, long and persistent finish.
Food Pairing
The perfect accompaniment for lamb, game, roasted and grilled meats, and exotic dishes.
