50% Stainless steel fermentation tanks blended with 50% demi-muids (600 liter French oak barrels). Temperature controlled in both cases with “bâtonnages” of the yeast lees. Six months aging in tank and barrel. Late bottling due to extended contact with yeast lees and barrel aging.
