The prestigious "Gavi dei Gavi"® La Scolca, it's made with the most strict compliance and respect for nature, with the most ancient and traditional rules of winemaking, since the pruning to harvest time, with a strict and careful selection in the vineyards, approaching an age of sixty years. Using ninety years old experienced and refined winemaking rules, a model of Gavi wine it's born into our cellar. This model is nowadays an unsurpassed benchmark, the result of a long tradition of generations. It's a wine that suprises: a delicate perfume in opposition with a strong character and a great personality: a wine that remains suspended within the time. Intense and alive, harmonious and balanced, it offers a suprising freshness and continuity. The complex flint, almond and walnut scents have their ability to evolve over time: a wine with a soul of a boy but an adult's heart.

GRAPE VARIETY: 100% Cortese.
PRODUCTION AREA: Gavi Hills.
VINIFICATION TECHNIQUE: "in white", cold, partially macerated on its skins; till to the bottling, it remains on its yeasts (autochthonous) from the first fermentation, that's to say "sur-lie".
AVAILABILITY OF THE LAST PRODUCED VINTAGE: late April/ May.
SERVING TEMPERATURE: about 12 °C.
COLOR: light straw with delicate light green reflections.
PERFUME: intense, long, continuous, persistent, from fruity to flowery depending on its step of evolution.
FLAVOURS: wide, sapid, flint scents, almond and walnut notes at the end.
GASTRONOMIC COMBINATIONS: excellent as an aperitif or throughout the whole meal; beside the typical white wines pairings (fish, shellfish and seafruits) it doesn't fear the pairing with white meats, poultry and light roasted meats.
